Crispy Smashed Potatoes | The Ultimate Side Dish

- 1.5 lbs baby potatoes
- 3 tablespoons olive oil
- 3 tablespoons butter, melted
- 4 cloves garlic, minced
- 1/2 cup parmesan cheese, grated
- Fresh rosemary and thyme
- Salt and pepper to taste

Instructions

Boil baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain well and let cool for a few minutes.

Mix melted butter, olive oil, minced garlic, and fresh herbs. Brush generously over each smashed potato. Season with salt and pepper.
